Adventures in Simple Meals: Red Beans, Beef & Rice

1lb of Dry Red Beans
2 cups uncooked Rice
1lb ground beef
Onions & Celery if available
Salt & Pepper

Soak your red beans in water with 1/4 cup of whey for 12-24 hours - drain, rinse, give fresh water and simmer for several hours, drain.
Fry 2 cups dry rice in 1/4 cup butter over medium heat until light browning has occured, add 4 cups water, cover and simmer until done (about 35 minutes)
Cook gound beef with onions & celery - season to taste with salt & pepper

Mix it all together and call it dinner!  Tastes great with cheese, sour cream, salsa, tortilla chips, whatever! :D  It can also be enhanced with onion & garlic powder.
