Adventures with Curry, Yum!

Hubby got creative with dinner because he forgot a key ingredient, and it turned out SOOO yummy!  I asked him to write down the recipe and send it to me and here it is...


5 Chicken Breast - Whole
2 Cans Coconut Milk
1 Cup Plain Yogurt
1 Large Onion - Chopped
2 Cloves Garlic - Minced
4 Tbsp Curry
Pepper & Salt to taste

Optional:
2 Tsp Red Pepper
2 Cups Frozen Veggies (Peas, Mixed, Etc.)

Place all ingredients in slow cooker and cook on low for 4-6 hours.
Shred chicken after cooking.
Serve over rice.
