Yummy!

This recipe is quick, it's simple, it's VERY easy, chocked full of vitamins and fiber, and VERY delicious! You can make it in the crock pot or on the stove top, either works well. Also, it is very easily adapted for any size group. Here is how we make it around here.

4 cans black beans
4 cans pinto beans
1 28oz can petite diced tomatoes
2 cans of corn
1 lb velveta cheese
2 cans chilies

Drain and rinse all your beans, dump in your pot. Drain and rinse your cans of corn & dump in your pot. Drain you can of diced tomatoes and dump in your pot. Dump your two cans of chopped green chilies in your pot. Cut your 1lb of velveta cheese into cubes and add to your pot. Stir occasionally until melted :) If making in a crock pot, allow 4 hours on high (stir every now and again). Serve with Tortilla chips or burrito shells. If you prefer a cheesier version, do 2lbs velveta. Also tasty eaten in a bowl, topped with a dollop of sour cream or cottage cheese.

This makes plenty to serve our family & leaves lots of left overs for daddy to take for work and to serve the kids for lunch the next day.
